The leaf symbol is still the same, and the metal is still gray. Some people use blue straps some use red others green... I guess it’s just a mater of choice.

Gai isn't taijutsu only. We know if nothing else he can summon. I think your instructor picks what your final test will be on. Perhaps lee's was on something taijutsu related.

Also just a side note Lee has used genjutsu on at least one occasion. He has fake cuts and bruises in ep 21. I would guess the thing where he wraps people up with his band aids must be a ninjutsu too….
